After a wild and fun filled weekend in the Florida keys, the best thing to show is what you ate.

Clean fillets well, remove fatty dark side-meat.  First, saute drained capers in olive oil till crispy light brown.  Remove capers, use hot oil to brown fish on one side until meat begins to show whitening of edges.  Sprinkle with dried tarragon (a few pinches), salt and pepper.  Flip over meat and deglaze with a few splashes of pino-grigio. Add a big dollop of sour cream to pan between fillets and bring to simmer.  Plate and cover with  fried capers

In conjucntion with Leo Kocking, Sid  Hoeltzell Studios has just finished capturing HI-RES  slpashes for a new  soft beverage.  This unique and exciting collection of images were captured at an astounding 1/12,000 of a second exposure; using the new Hasselblad H-2 and the incredible Leaf Aptus 75.  These raw files came in at 190 mgs @ 16 bit.

As a professional photographer, Miami based Sid Hoeltzell has visited the patriotic nostrils of the Statue of Liberty, been on assignment for the Vatican and taken photographs 180 feet under water and perched atop massive windmill.
